Join Hadar Iron of inFerment Studio for a hands-on workshop exploring the beautiful, ancient practice of fermenting vegetables in a ceramic water-seal crock.

We’ll begin with the basics of fermentation — how salt, time, and beneficial bacteria transform fresh vegetables into deeply flavorful, nourishing food — and continue with a talk about the cultural and historical evolution of fermentation across different traditions. Together, we’ll prepare a seasonal vegetable ferment and learn how the water-seal crock creates the perfect environment for fermentation: allowing gases to escape while keeping oxygen out.

Along the way, we’ll also talk about the ceramic vessels themselves — why high-fire clay matters and how the water-seal design works.

Each participant will leave with practical fermentation knowledge, a fresh ferment started in class, a booklet with recipes, and a handcrafted ceramic crock made in the studio — a functional piece of art to use for many years of kitchen adventures.
